Tasty Beginnings

I guess I will try and use this as a "Hey, this is my life, these are the things I do outside of my job" type of blog. Lots of recipes, pictures, rants, and obsessions. If you're lucky, all of these things in one!

SO!

As my first post with this nifty little blog, I give you something sweet and delectable. My step mom gave me this recipe, and it's a great healthy alternative to a dessert... but, I won't lie, most of the time the Foulke household likes to have it for breakfast. I mean, it IS healthy. and I am always down for dessert as breakfast.

Honey Rhubarb over Yogurt

All you'll need for this recipe is:
1 stalk of fresh Rhubarb
1/2 cup of honey
1 cup plain or vanilla Yogurt

First: You're going to cut the rhubarb into 1/2 inch pieces, then throw them into a pot on medium-low heat.

Second: Add the 1/2 cup of honey

Third: Start stirring!

Fourth: Let the rhubarb and honey froth up a bit.

Fifth: After enough frothing action as occurred, let the honey and rhubarb start to reduce. Keep stirring! After about 6-10 minutes (depending on the heat of your stove), the rhubarb should start breaking down and becoming mushy. Break it up against the side of the pan, and keep mixing it all together.

Six: Get some Plain or Vanilla Yogurt, and put it in a bowl.

Seven: By this time, your honey and rhubarb should be ready to eat. Let it cool for a few minutes, and then spoon some onto your yogurt!

Mix it all up, and enjoy! I'm serious, this stuff is life changing. :)
